Grilling REALLY big steaks?
I’m pretty good with a grill but these steaks are a little out of my league. 2 bone-in ribeyes, each about 2 inches thick and coming in at a full 2 lbs each. I’d like them to come out rare to medium rare but i don’t want the centers to be entirely raw. What’s the best way to grill them (big Weber charcoal Kettle) so they come out evenly cooked with a nice caramelization on the outside but still at least heated all the way through and not pure raw in the center?

pile your charcoal on one side
sear the steaks directly over the coal, then move it to the other side and close the lid to finish cooking through
they will be done when the temperature in the middle gets to 120-125 for rare, or 130 to 135 for medium rare.
remove them, and cover with foil, then let them sit for 15 min before cutting, which will let the juices re-absorb and finish cooking
