When barbecuing tenderloin in a gas grill, wrap in foil or let it drip?
It’s our first time owning a barbecue grill. It’s propane. We got this big tenderloin roast that looks like the worm baby from The Fly, gonna cut it in half and barbecue it tonight. But it’s pretty fatty, and my experience with broiling meat tells me it will drip a lot of juices. So should I put a sheet of foil under it? Wrap it in foil? Or just let it drip?
Why a pan with water? I’m to put a pan inside my barbecue??
The distinctive flavor of barbecuing (or more properly, grilling) is caused by the fat in the meat melting and dripping onto the hot coals (or in the case of gas grills, dripping on the hot metal burner covers) and turning into smoke. The smoke then envelops the meat and gives it the smoky flavor we all love. If you wrap your meat in foil or put a layer of foil over your grill, you are defeating the purpose of grilling, and you might as well cook your meat in the oven.
Don’t bother with the pan of water, either. Braising is better done in an oven. Grills are made to let the fat drip and turn into smoke.
